Spaghetti with Wild Rocket Pesto
Updated: Sep 15, 2020
This is a great recipe for feeding any size family. This Wild Rocket Pesto goes really well over rice or pasta. You can add bacon on the spaghetti with the sauce poured over it. Either way, it's one of my favorite meals and is perfect for feeding just my family or friends.
Spaghetti 350 g
extra-virgin olive oil 2 tbsp (30 ml)
peeled tomatoes 600g about 2 1/2 cups
onion, chopped 2/3 cup
garlic 1 clove
basil 8 leaves, chopped
Parmigiano-Reggiano cheese, grated 1/4 cup
salt and pepper to taste
Preparation time: 30 minutes + 8 minutes cooking time
Sauté the chopped onion in the oil in a saucepan, together with the whole peeled clove of garlic. When the onion turns golden brown, add the chopped tomatoes, salt and pepper. Cook the sauce over high heat for about 20 minutes, stirring from time to time. When it is cooked, remove the garlic and add the Wild Rocket Pesto sauce along with the basil and mix.
Cook the spaghetti in salted boiling water until al dente (6 - 8 minutes); drain and add the sauce. Sprinkle with the grated parmigiano cheese.
Adding the Wild Rocket Pesto will provide a delicious flavorsome taste to your meal. Wild Rocket Pesto contains dried tomatoes, wild rocket 20%, toasted almonds, Grana Padano cheese (milk, salt, rennet, egg protein lysozyme), sunflower oil, extra virgin olive oil, salt, acidifier: citric acid, garlic. May contain traces of celery and nuts (pistachio, walnuts).
