Spiral Delight

Spiral delight is made with Fusilli pasta and Alcantara Walnuts Pesto. We add extra tomatoes, chilli, and onions. It is a simple dish, easy to make, and filling. If the sauce is to be the feature, you want to use a pasta that is going to keep that sauce in the spotlight. Fusilli is the perfect complement to the tomato sauce. The spiral (corkscrew) shaped pasta traps lots of sauce within its spirals, making each mouthful a perfect balance of chewy pasta and silky sauce.

What you need is a 500g pack of Piazza Pasta Fusilli and a 220g jar of Alcantara Walnuts Pesto sauce. Add to that three tomatoes, two onions, and one chill.


  • Wash and peel the onions. Chop the onion into smaller pieces either squared or rings.

  • Cut the 3 tomatoes into square cube pieces, small or large does not matter.

  • Crush one garlic.

  • Place all the ingredients, except the fusilli, in a saucepan and place over a medium heat. Use Olive Oil to stop sticking.

  • Cook for about 45 minutes, stirring occasionally or until onion rings are brown.

  • Add the jar of Alcantara Walnuts Pesto to the mix and stir with a wooden ladle to heat the pesto.

  • When cooking is complete, take off the stove.

  • Cook the fusilli pasta as per the instructions on the packet (something like 5-7 minutes in a good dose of salted water).

  • Drain the pasta, add it to the sauce, and stir to coat.

  • Serve topped with some freshly grated or shaved Parmigiano-Reggiano or Parmesan.

Depending on appetite and usual eating habits, this meal should feed four adults.

You can of course add bacon or ham if you prefer. The salt from the pork will enhance the flavor of the tomatoes. I didn't have any pork in the refrigerator when I started making this ao I left it out of the menu prep.
